The Fatted Calf restaurant was a Clayton institution that closed its doors in 2012, but it now has itself a brand new tenant in the franchise business. The local franchise owners of the Chicago-based Potbelly Sandwich Shop chain, well known for its milkshakes and toasted sandwiches, has signed a lease for five years at 12 S Bemiston Avenue, Hilliker Corps claims.
The shop, which is owned by Todd and Angie Stimson in partnership with Doctor Laurence and Monica Boveri – who were responsible for the opening of the first St Louis Potbelly location in Creve Coeur last year – is intending to open in October, according to Todd Stimson, with a move afoot to open two more locations by 2015. Stimson says that the overall Clayton investment will be somewhere in the region of $700,000, with the plans calling for a brand new facade and gut renovation. The work will be carried out by Hallemann Construction.
The 2,445-square-foot restaurant’s lease rate was $24 per square foot, Hilliker’s marketing materials make clear. The Fatted Calf, which was well known for its ‘calfburgers’, closed in 2012 after over 45 years in operation.
The restaurant was owned by Kathleen and Jason Portman, who made the move to purchase it in 2008 from Kathy Sellenriek. The restaurant was first opened in 1966 in downtown St Louis by restaurateurs Vince and Tony Bommarito. Potbelly Sandwich Shop now has 270 locations all over the United States.
